Our story begins in the sun-drenched hills of Ilis, Peloponnese, where our olive groves have thrived for generations. This ancient land, blessed with the perfect Mediterranean climate and rich, fertile soil, produces olives of exceptional quality and flavor.

Every tree in our groves is a testament to tradition, carefully tended using methods passed down through the ages. We believe that great olive oil starts with great olives, and our commitment to the land ensures that every fruit reaches its full potential.

From Land to Bottle

Our traditional process ensures the highest quality at every step

Step 1: The Harvest

Timing is everything. We harvest our olives at the perfect moment of ripeness, when they’re brimming with flavor and nutrients. Our harvest happens during the cooler months, typically between November and January.

Each olive is carefully hand-picked or gently shaken from the trees using traditional methods that protect both the fruit and the tree. We transport them to our mill within hours to preserve their freshness.

Step 2: Mechanical Processing

We use only mechanical means to extract our oil – no chemicals, no solvents, nothing artificial. The olives are first cleaned and washed, then crushed into a paste using traditional stone mills or modern hammer mills.

This paste is slowly mixed (malaxed) to allow the tiny oil droplets to combine, making extraction easier while preserving the delicate flavors and aromas. Every step is carefully monitored to maintain quality.

Step 3: Cold Extraction

This is where the magic happens. We maintain temperatures below 27°C (80°F) throughout the extraction process – what’s known as “cold extraction.” This preserves the oil’s precious antioxidants, vitamins, and that distinctive peppery flavor that defines premium extra virgin olive oil.

The oil is separated from the water and solids using modern centrifuges, then filtered and stored in stainless steel tanks away from light and oxygen. Finally, it’s bottled in dark glass to protect it until it reaches your table.
